Why Your Drip Machine Is Killing Your Coffee
Most home drip machines have two fatal flaws: they brew too cold and they brew too fast. The heating elements in a $40 drip machine typically reach 85-88°C — 10 degrees below the ideal extraction temperature. At that temperature, the water can't fully dissolve the flavor compounds in the coffee. You get a thin, under-extracted cup that tastes sour and weak.
Even worse, most drip machines shower water continuously over the grounds, creating a channel where water finds the path of least resistance and bypasses most of the coffee. The result: uneven extraction where some grounds are over-extracted (bitter) and most are under-extracted (sour). You get both flaws in the same cup.
A pour over solves both problems. You control the temperature (bring water to a boil, let it sit 30 seconds). You control the flow rate (pour in stages, letting each bloom before adding more). You control the grind (medium-fine, like table salt). The result is even extraction at the right temperature — which is the only way to taste what the farmer intended.

The Pour Over Method (Step by Step)
The pour over is the best way to taste single origin coffee. It's clean, it's controlled, and it lets the coffee's character come through without the muddiness of a French press or the intensity of espresso. Here's how to do it right:
The French Press (When You Want Body)
The pour over gives you clarity — you can taste individual notes. The French press gives you body — the metal filter lets oils through that paper traps. For a Honey Caturron with heavy body and black cherry notes, the French press can be excellent. For a delicate Jaguar Honey with floral aromatics, it can muddy the cup.
Water: The Ingredient You're Ignoring
Coffee is 98% water. If your water tastes bad, your coffee will taste bad. If your water is too hard (high mineral content), it over-extracts and tastes bitter. If it's too soft, it under-extracts and tastes flat. The ideal brewing water has 50-150 ppm total dissolved solids, with magnesium and calcium in balance.
Use filtered water or spring water. Not distilled (too soft — nothing to extract with). Not tap if you can smell chlorine. A Brita filter is fine. The difference between tap water and filtered water in a $25 coffee is immediately noticeable.
The Grind: Why Your Blade Grinder Is Ruining Everything
A blade grinder doesn't grind coffee — it chops it. The result is a mix of powder and chunks. Powder over-extracts (bitter). Chunks under-extract (sour). You get both in the same cup. A burr grinder crushes the beans to a uniform particle size, which means even extraction, which means you taste the coffee instead of the grind inconsistency.
If you're buying $25 coffee, spend $50 on a burr grinder. It matters more than the brewer. The Baratza Encore is the entry-level standard. A hand grinder like the Hario Slim works too. What matters is consistent particle size.
Good beans + good grinder + good water = you taste the farm.

When you brew a single origin coffee properly for the first time, you might be surprised. It won't taste like "coffee." It might taste like jasmine tea. Or black cherry. Or chocolate-covered orange. Or brown sugar and molasses. This is the point. Single origin coffee isn't trying to taste like generic coffee — it's trying to taste like a specific place.
The more you taste, the more you'll taste. The first cup of single origin might just taste "different." By the fifth, you'll start picking out specific notes. By the twentieth, you'll taste the difference between a Costa Rican and a Colombian without being told. That's not snobbery — that's practice. And it's the whole point of buying coffee with a story.
