What Is a Coffee Variety?
Coffea arabica is a species. Within that species, there are varieties — naturally occurring mutations and human-selected cultivars that have distinct genetic traits. These traits determine how the plant grows, how much coffee it produces, how resistant it is to disease, and — most importantly for your cup — what the coffee tastes like.
Think of it like apples. A Granny Smith and a Honeycrisp are both apples. But they taste completely different, they grow differently, and they cost different amounts. Coffee varieties work the same way. A Caturra and a Geisha are both arabica. But one yields 1,500 kg/hectare and tastes like citrus and caramel. The other yields 300 kg/hectare and tastes like jasmine and bergamot.

Why Variety Determines Price
The price difference between varieties comes down to one factor: yield. Not quality — yield. A Geisha plant produces roughly 300-500 kg of coffee per hectare. A Catimor hybrid produces 1,500-2,500 kg per hectare. That's 3-5x more coffee from the same amount of land. Same labor, same fertilizer, same water — 5x more coffee.
If you're a farmer and your Geisha produces 300 kg/ha, you need to charge $20/lb just to break even on land costs. If you're growing Catimor at 2,200 kg/ha, you can charge $2/lb and still profit. The yield difference explains most of the price difference. The quality difference explains the rest — Geisha scores 90+, Catimor scores 78-82.
How Mutation Creates New Varieties
Coffee varieties emerge through two mechanisms: natural mutation and selective breeding. Natural mutation is how Caturra came from Bourbon, and how Caturron came from Caturra. A single plant's genetics randomly change, producing a new trait — dwarf size, larger cherries, different flavor. If the mutation is desirable, farmers propagate it.
This is what happened with our Honey Caturron. Luis Anibal Calderon noticed a Caturra plant on his farm that looked different — larger leaves, heavier cherries. It had mutated naturally. He kept it, propagated it, and discovered it tasted extraordinary. A single random mutation created a new variety that now scores 89.5 on the cupping table.
Why Grocery Store Coffee Uses Catimor Hybrids
Catimor was bred for one purpose: maximum yield with minimum disease. It's a cross between Caturra and Timor — Timor being a natural hybrid of arabica and robusta. The robusta genetics give Catimor disease resistance (specifically to coffee leaf rust) and high yield. They also give it a harsh, astringent flavor profile that tastes nothing like specialty arabica.
But for commodity coffee, flavor doesn't matter. What matters is producing 2,200 kg/ha instead of 800 kg/ha. A farmer growing Catimor produces almost 3x as much coffee per hectare as a farmer growing Caturra. At commodity prices, that's the difference between profit and bankruptcy. So most commodity coffee — the stuff in grocery store blends — is Catimor or similar hybrids.
The Trade-Off: Yield vs. Quality
There's a fundamental tension in coffee agriculture: the varieties that taste best yield the least, and the varieties that yield the most taste the worst. A farmer who plants Geisha is betting that the quality will command a high enough price to compensate for the tiny yield. A farmer who plants Catimor is choosing volume over quality because the commodity market only pays for volume.
With direct trade, the math flips. A farmer growing 800 kg/ha of Caturra at $6/lb earns more than a farmer growing 2,200 kg/ha of Catimor at $1.50/lb. Less coffee, more money. This is the economic argument for specialty: by focusing on quality over quantity, farmers can earn more while producing less. Direct trade makes this possible. The C-market makes it impossible.
Geisha asks: how good can it be?
The answer to both questions is coffee.
They are not the same answer.
What This Means for Your Cup
When you buy a bag of single origin coffee and it says "Caturra" or "Geisha" or "Caturron," that's not marketing copy. That's the genetic identity of the plant that produced your coffee. It tells you what to expect in the cup — Caturra's bright acidity, Bourbon's sweetness, Geisha's floral delicacy, Caturron's wild complexity.
When a grocery store bag says "100% Arabica," it's telling you nothing. It could be Catimor. It could be a blend of a dozen anonymous varieties. The variety doesn't matter at commodity level because the roast is dark enough to erase the differences anyway. But at specialty level, variety is everything. It's the genetic code that determines whether your coffee tastes like jasmine or like cardboard.
Next time you buy coffee, check the variety. If it's listed, the roaster wants you to know what's in the bag. If it's not listed, it's probably Catimor — and the roaster would rather you didn't ask.
