The Roast Is the Final Translation

Everything the farmer did — the elevation, the variety, the 100-hour fermentation, the careful hand-picking — is written into the green bean. But that bean is inedible. It tastes like grass and cardboard. The roaster's job is to translate what the farmer wrote into something you can taste in a cup. And like any translation, it can be faithful or it can lose everything.

A bad roast doesn't just fail to show the coffee's best qualities. It actively destroys them. The 800+ aromatic compounds that make a Geisha taste like jasmine, a Caturron taste like black cherry — those compounds form during roasting, peak at a specific moment, and then burn off if the heat continues. A roaster who pushes 30 seconds too long doesn't just "roast it a little darker." They erase the farm.

What Actually Happens During a Roast

Coffee roasting is controlled burning. You're applying heat to a seed until its internal chemistry transforms. The process happens in distinct stages:

The Roast Timeline
1.Drying phase (0-8 min, 0-160°C): Moisture evaporates. The bean turns from green to yellow. Smells like hay. Nothing tasty yet.
2.Maillard phase (8-12 min, 160-196°C): Sugars and amino acids react. The bean turns brown. Hundreds of flavor compounds form. This is where the flavor is built.
3.First crack (12-14 min, ~196°C): Steam builds pressure until the bean audibly cracks — like popcorn. This is the boundary between light and medium roast. Most aromatic compounds are at peak. This is where single origin should stop.
4.Development (14-16 min, 196-220°C): The window after first crack where the roast is finished. Too short and the coffee tastes underdeveloped. Too long and you burn off the origin character.
5.Second crack (16+ min, ~227°C): Cellulose breaks down. The bean cracks again. Oils migrate to the surface. You're now in dark roast territory. Origin character is gone.

Why Grocery Stores Over-Roast

Dark roasting is the coffee industry's oldest trick. When you roast dark, every bean tastes the same — because you've burned away everything that made them different. A defective bean from a low-altitude farm in Vietnam and a beautiful Geisha from Panama both taste like dark roast. The carbon masks everything.

This is why grocery store coffee is almost always dark roasted. Not because dark roast is better. Because it hides defective beans. When you're blending cheap commodity coffee, you can't afford to let the customer taste the individual components — because the individual components taste bad. Roast it dark enough and nobody knows.

The 90-Second Window

Between first crack and second crack — roughly 90 to 120 seconds — the roaster makes every decision that matters. Stop early and the coffee is bright but underdeveloped. Stop late and you've killed the origin. A skilled roaster tastes every batch, adjusts the heat curve, and finds the exact moment where this specific coffee from this specific farm tastes like itself.

This is why small-batch roasting costs more. A commercial roaster running 5,000-pound batches can't taste or adjust for individual lots. A specialty roaster doing 25-pound batches can stop at the exact right moment for each coffee. That 90-second window, multiplied across hundreds of batches, is the difference between coffee that tastes like a farm and coffee that tastes like a factory.

How to Tell If Your Coffee Was Roasted Well

The Visual Test
1.Look at the beans: Dry and light brown = light roast. Oily and black = dark roast. A slight sheen but not wet = medium roast.
2.Check the roast date: If it's not on the bag, assume it's old. If it's more than 4 weeks old, the aromatics are fading. More than 8 weeks, it's stale.
3.Smell the grounds: If you smell smoke or ash, it's over-roasted. If you smell flowers, fruit, or sweetness, the roast preserved the origin character.
4.Taste it black: If every coffee from the same roaster tastes similar regardless of origin, they're roasting too dark. If a Costa Rican tastes different from a Colombian, they're roasting to show the farm.

What This Means for Your Cup

When you buy a single origin coffee — a Jaguar Honey from Costa Rica, a Purple Caturra from Colombia — you're paying for the farm's story. But that story only survives if the roaster lets it. A light-to-medium roast on a single origin gives you the floral aromatics, the bright acidity, the specific fruit notes that the farmer cultivated. A dark roast on the same coffee gives you... roasted flavor. The same roasted flavor you'd get from a $5 bag.

The roast is the last hand that touches your coffee before you do. Make sure it's a careful one.
